I followed up the recommendation made in your newsletter to have a private chef for one of the meals we had on our holiday. I chose Emily Hardcastle at A Tuscan Table because she said she cooked for vegetarians. She was endlessly patient in planning the menu taking into account our preferences and came up with a brilliant menu within our budget, which she cooked to perfection. I could not rate her professionalism and skills more highly, so if you have any queries from other readers, especially for those with special diets, do recommend her. They will be as pleased as we were.

My family and I stayed at the Casale la Canonica for 2 weeks last September and during that time we asked Emily Hardcastle from 'A Tuscan Table' to prepare an evening meal for us. I had intended to forward a review to you on our return but as always with such things, if not done right away, they tend to fall off the end of the desk. I have recently got down to recovering these outstanding items and would like to present the following review for inclusion on your website:
'My family of 9 adults and 2 children were delighted with the splendid meal prepared for us by Emily Hardcastle during our holiday in Chianti. We have a couple of adults with particular dietary preferences which can make for difficulties with set menus but Emily was happy to discuss and suggest one or 2 variations which satisfied all tastes. The aromas wafting from our kitchen throughout the late afternoon and evening left us weak-kneed! The meal was beautifully served al fresco and the kitchen left tidy and spotless. The evening was the highlight of our holiday.

Our accommodation, which cost less than £800 for the week, is in a converted stone farmhouse next to a 12th Century Franciscan chapel. There is a pergola shaded by vines round the back here we quickly settle into a rhythm of eating long pasta suppers while the shadows lengthen.
